LUNCH


This is what to do when you have Roma Tomatoes that are too ripe to use in a salad.




Dice a couple of chicken tenders (4oz), dice the Roma tomatoes, add a few little new potatoes (cut in half), put them all in an over proof dish and cover with low fat mozzarella cheese and bake for 15-20 minutes in a 350 F oven.





Serve up and enjoy. Quick and Easy Lunch!
